South Korean scientists tout 'beef rice' as future source of protein

South Korean researchers have grown beef cells in rice grains in what they say is a major step towards achieving a sustainable, affordable and environmentally friendly source of protein that could replace farmed cattle for meat.

Professor Jinkee Hong of Yonsei University in Seoul, who led the research published in the journal Matter this month, said the "beef rice" was the first product of its kind. It uses grain particles as the base for cultivating animal muscle and fat cells.

In the research, rice grains were treated with enzymes to create an optimal environment for cell growth, then infused with bovine cells that were cultivated to achieve the final hybrid product, which resembles a pinkish grain of rice.

The Yonsei team is not the first to work on lab-grown meat products. Companies around the world have launched cultivated meat; one of the latest involves plant-based chicken and eel cultivated from a soy base, marketed in Singapore.

Hong's team said rice had an advantage in terms of safety relative to soy or nuts because fewer people were allergic to it.
"If successfully developed into food products, cultured beef rice could serve as a sustainable protein source, particularly in environments where traditional livestock farming is impractical," he said.
The beef rice contains approximately 8 per cent more protein and 7 per cent more fat than conventional rice. Hong noted the protein was 18 per cent animal-based, making it a rich source of essential amino acids.

Priced at about $US2 ($3) per kilogram and with a far smaller carbon footprint than traditional beef products, cultured beef rice could compete on grocery shelves, Hong said.

He said challenges remained from a technical standpoint and in terms of winning over customers with flavour and texture.

Keum Dong-kyu, who recently sampled the beef rice at a Korean barbecue restaurant in Seoul, said it was innovative.
"But honestly, I don't think it can replicate the juiciness or texture of real beef," Keum said.
Christian Krammel, who is visiting from Germany, was more positive.

"Now, it does not compare to beef yet, but as I see the research is in early stages, I would say it's a great way forward," Krammel said.

I hope it eventually gets perfected and (If its good) succeeds. I love meat, but I hate killing living creatures like we do for our consumption. Would love to live in a world where slaughter houses stop being a thing and we still get to enjoy the taste of meat.
 
Fuck all this GMO food that potentially can be unhealthy than regular natural non GMO foods.
I don't get all the "if it tastes good" it's OK , not everything that tastes good is good for your body

So you think we should stop trying to figure out better ways to do things? The ability to stop killing hundreds of millions of animals a year is a worthy reason to try and figure out if we can find new and better sources of food, especially if we can find healthy ways to do it. Not saying its perfect or right yet or even soon, but I am happy we're trying to figure something out instead of just being "Fuck GMO food.."

There are other ways to get protein than this , I grew up on a farm and have no issues with properly raising animals for sources of protein , this is how we adapted from cavemen to where we are today and your never going to get rid of it with mega fast food chains reliance on "killing hundreds of millions " of animals.
They tried that with the non meat products and have mostly failed , so yes fuck all GMO foods that potentially can do more harm then good .
You think industrial mega farming is good for you or the environment too ? Well I got news for you it's really not and local smaller farmers usually do it much better and safer for the people and animals/food grown and raised

Decent invention and I'd eat it after it's been thoroughly tested and other, more gullible sods have been eating it for years first.

But…

Animal proteins are not the only benefit of eating meat. Fats, carbohydrates, vitamins and minerals of a million different variations are all present in meat and hugely beneficial to healthy human growth.

Even just cheap industrial farmed meat is deficient in most of those, with most cheap meat cuts barely better for you than the hyper processed vegan alternatives on the market, even if you're dealing with an unprocessed cut of meat, and not some ready made burger or fast food meal.

To think that simply giving the same protein as beef to rice will somehow replace actual healthy, free range, well cared for, properly reared, stress free, freshly slaughtered/prepared and organic beef in terms of quality and nutrition value, and that that can be used at scale to replace meat entirely, is simply midwittery of the highest order.

As I've said before, I'm a vegetarian, have been for nearly 25 years, and going without meat and staying healthy, even with diary and eggs, takes an enormous amount of effort and planning. 'Beef rice' is not going to change that.
 
All of that effort for an 8% boost in protein within rice? They could just serve themselves 8% more rice for the same effect…

I think if someone really wants to replace meat in their diet they should focus more on soy products/tofu, milk/cheese, eggs and other various vegetables/beans.

All of this meat replacement research is just a waste of time IMO.

It's always about increasing carbs and protein, never fats 🤔

You would think people looking at "improving efficiency" would utilize the much more dense energy source of the three options.

I think if someone really wants to replace meat in their diet they should focus more on soy products/tofu, milk/cheese, eggs and other various vegetables/beans.

All of this meat replacement research is just a waste of time IMO.

We have enough soy boys aleady.
