Ezio's arc is my personal favorite. Ubisoft had really leaned into melding conspiracy and historical aspects that made for a compelling narrative and what ifs. The game iterated in a way with Ezio that flirted with systems on brotherhood in helping the idea that the Assassins were a formidable force to counter the Templars. Building up your villa with passive bonuses is always a crowd pleaser. I wanted an ancient Rome arc after it, which Odyssey didn't quite capture in a way I wanted, though it was appreciated with the compare and contrast to the Greeks.
Ezio's story line kept the modern aspects a bit more cohesive even if Desmond's story went off the rails and reconned the big solar event which never happened.
I still look back fondly on the totality of Ezio's adventure as a whole.
Only Black Flag/Rogue compares, for me, but mainly due to the Naval combat and outfitting of the ships. Also sea chanties.
