It doesn't have to be strictly exclusive or anything since publishers are collaborating a bit more often these days but for Nintendo, PlayStation, Xbox which characters (doesn't necessarily have to be protagonists either) carry the most mystery within their character?

For Nintendo I think the Happy Mask Salesman, Majora and the Fierce Deity are up there.

Nayru, Din and Farore themselves who have never done anything on screen outside the very brief Ocarina of Time cutscene of the legend of their forming the world and their role has been more or less retconned since Skyward Sword. YMMV on their Oracles and the Dragons bearing their name.

As for events? The exact nature of the events of the Hyrule Civil War prior to Ocarina of Time, the creation of the Shadow Temple. The exile and heavily implied genocide of the Gerudo before Twilight Princess, hell Tears of the Kingdom has a huge Gerudo Cemetery and Colosseum below Arbiters Grounds. The events that led to the King exiling Shiekah who refused to abandon high tier technology and leading to formation of the Yiga Clan (don't think they were openly worshiping Ganon as the reason at least at first, maybe that was covered up?).

But yeah happy mask salesman in particular is like… what actually are you. Also, I literally just thought of this but it almost seems like he *let* skull kid take the mask, to test you.

Also, the biggest mystery to me is the tribe of stone tower, man it would be interesting to see that history.

Twinrova, ironically enough. No other Gerudo has her/their? sheer power and mastery of fire and ice magic also hypnosis and fusion/splitting into two diffrent beings (black magic?), while later Chieftains like Urbosa and Riju specialize in lightning magic (but no magical use of ice and fire.)

The Happy Mask Salesman ran through my mind as a prime candidate as well. Majora's Mask in its entirety is a mystery. Definitely on the money with that one @Chozofication
