Thread: Is chipotle aioli the best condiment?
Seed oils are bad for you. I usually ask my sandwiches condiment free and put my own when I get home with the food. For cold cut sandwiches, I do a mix of 100% avocado oil mayo with sriracha and a bit of lime juice.
 
totally depends. I think simple sauces with real ingredients taste best. Fresh-ground spices and/or fresh herbs go a long way. Easy example of my snobbery: years back I learned how to whip together homemade hollandaise to put on top of eggs benedict, and that day I realized I'd never eaten real eggs benedict before. Same thing with whipping up homemade mayonnaise, just a few ingredients thrown into a blender (i used one of those emulsion blender things) and that day I realized I'd never eaten real mayonnaise before

Fresh aioli is also a different beast than the bottled stuff if you know how to properly balance the spices.
